Molho De Amendoim (peanut Stew)

Ingredients

  • 1 lb chicken, cut into pieces
  • 1 cup peanut butter
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 cups chicken broth
  • 1 cup okra, sliced
  • 1 cup spinach, chopped
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken pieces over medium heat.
  2. Add the onions and tomatoes, and cook until the onions are soft.
  3. Stir in the peanut butter and chicken broth, and bring to a simmer.
  4. Add the okra, spinach, cayenne pepper, salt, and pepper. Simmer for 30 minutes, stirring occasionally.
  5. Serve the Molho de Amendoim hot over rice or couscous.
