Ingredients
- 1 lb chicken, cut into pieces
- 1 cup peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 2 cups chicken broth
- 1 cup okra, sliced
- 1 cup spinach, chopped
- 1 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat.
- Add the onions and tomatoes, and cook until the onions are soft.
- Stir in the peanut butter and chicken broth, and bring to a simmer.
- Add the okra, spinach, cayenne pepper, salt, and pepper. Simmer for 30 minutes, stirring occasionally.
- Serve the Molho de Amendoim hot over rice or couscous.
