Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 red bell peppers, diced
- 2 green chilies, chopped
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, paprika, and cayenne pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the tomatoes, bell peppers, and green chilies to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste, ground cumin, and chicken broth. Return the chicken pieces to the pot and bring the stew to a simmer.
- Cover the pot and let the stew simmer for 45-50 minutes, or until the chicken is cooked through and tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Molho de Galinha hot with steamed rice or crusty bread.
