Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 red bell peppers, diced
  • 2 green chilies, chopped
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Season the chicken pieces with salt, pepper, paprika, and cayenne pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  4. Add the tomatoes, bell peppers, and green chilies to the pot. Cook for 5 minutes, stirring occasionally.
  5. Stir in the tomato paste, ground cumin, and chicken broth. Return the chicken pieces to the pot and bring the stew to a simmer.
  6. Cover the pot and let the stew simmer for 45-50 minutes, or until the chicken is cooked through and tender.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the Molho de Galinha hot with steamed rice or crusty bread.
