Momos Thukpa (tibetan Style Dumpling Soup)

Ingredients

  • 1 lb ground chicken
  • 2 cups all-purpose flour
  • 1 cup cabbage, finely chopped
  • 1/2 cup carrots, grated
  • 1/4 cup green onions, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 1 tsp sesame oil
  • 6 cups chicken broth
  • 1/2 cup spinach, chopped
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the ground chicken, cabbage, carrots, green onions, soy sauce, ginger, garlic, sesame oil, salt, and pepper. This will be the filling for the dumplings.
  2. On a clean surface, place the all-purpose flour and gradually add water to form a smooth dough. Roll the dough into a log and cut it into small pieces. Roll each piece into a thin circle to make the dumpling wrappers.
  3. Place a spoonful of the chicken filling in the center of each wrapper. Fold and pleat the edges to seal the dumplings.
  4. In a large pot, bring the chicken broth to a boil. Add the dumplings and cook for 10-12 minutes, or until they float to the surface.
  5. Add the spinach and cilantro to the pot and simmer for an additional 5 minutes. Adjust the seasoning with salt and pepper.
  6. Divide the dumplings and soup into serving bowls and enjoy hot.
