Monaco Fish Soup (Soupe de poisson monégasque)
Soupe de poisson monégasque, or Monaco Fish Soup, is a traditional dish from the cuisine of Monaco. This rich and flavorful fish soup is a beloved part of Monégasque culinary heritage, often enjoyed as a comforting and satisfying meal.
Ingredients
- 1 lb mixed fish (such as red snapper, sea bass, and monkfish), cleaned and cut into chunks
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 fennel bulb, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups fish stock
- 1/2 cup white wine
- 1/4 cup olive oil
- 1 bay leaf
- 1 tsp saffron threads
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and fennel, and cook until softened.
- Add the diced tomatoes, fish stock, white wine, bay leaf, and saffron to the pot. Bring to a simmer.
- Add the mixed fish chunks to the pot and simmer for 30-40 minutes, or until the fish is cooked through.
- Season the soup with salt and pepper to taste.
- Remove the bay leaf before serving.
