Monaco Fish Soup (Soupe de poisson monégasque)

Ingredients

  • 1 lb mixed fish (such as red snapper, sea bass, and monkfish), cleaned and cut into chunks
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 fennel bulb, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups fish stock
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 1 bay leaf
  • 1 tsp saffron threads
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and fennel, and cook until softened.
  2. Add the diced tomatoes, fish stock, white wine, bay leaf, and saffron to the pot. Bring to a simmer.
  3. Add the mixed fish chunks to the pot and simmer for 30-40 minutes, or until the fish is cooked through.
  4. Season the soup with salt and pepper to taste.
  5. Remove the bay leaf before serving.
