Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) artichoke hearts, drained
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup white wine
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Pour in the white wine and chicken broth, and bring to a simmer.
- Return the chicken to the skillet, add the artichoke hearts, and simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the chicken and artichokes with the sauce spooned over the top.
