Monaco-style Stuffed Tomatoes (Tomates farcies à la monégasque)
Tomates farcies à la monégasque, or Monaco-style stuffed tomatoes, is a traditional dish from the cuisine of Monaco. This recipe features ripe tomatoes stuffed with a flavorful mixture of ground meat, vegetables, and herbs, then baked to perfection. Ingredients
- 4 large tomatoes
- 250g ground beef
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup cooked rice
- 2 tbsp fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
- In a skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned. Season with salt and pepper.
- Stir in the cooked rice, parsley, and Parmesan cheese. Remove from heat.
- Stuff the tomatoes with the meat mixture and place them in a baking dish.
- Bake for 30-35 minutes, until the tomatoes are tender and the filling is golden brown.
- Serve the stuffed tomatoes hot, garnished with additional parsley if desired.
