Monaco-style Stuffed Tomatoes (Tomates farcies à la monégasque)

Ingredients

  • 4 large tomatoes
  • 250g ground beef
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup cooked rice
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
  3. In a skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Season with salt and pepper.
  5. Stir in the cooked rice, parsley, and Parmesan cheese. Remove from heat.
  6. Stuff the tomatoes with the meat mixture and place them in a baking dish.
  7. Bake for 30-35 minutes, until the tomatoes are tender and the filling is golden brown.
  8. Serve the stuffed tomatoes hot, garnished with additional parsley if desired.
