Ingredients
- 4 medium zucchinis
- 250g ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup cooked rice
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the flesh, leaving about 1/4 inch of flesh on the skin. Chop the scooped-out flesh and set aside.
- In a skillet, heat olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the chopped zucchini flesh and cooked rice. Cook for another 5 minutes.
- Remove the skillet from the heat and stir in the Parmesan cheese and parsley. Season with salt and pepper.
- Stuff the hollowed-out zucchini halves with the meat mixture and place them in a baking dish.
- Bake for 30-35 minutes, or until the zucchinis are tender and the filling is golden on top.
- Serve the stuffed zucchinis hot and enjoy!
