Monaco-style Stuffed Zucchini (Courgettes farcies à la monégasque)

Ingredients

  • 4 medium zucchinis
  • 250g ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cooked rice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the flesh, leaving about 1/4 inch of flesh on the skin. Chop the scooped-out flesh and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in the chopped zucchini flesh and cooked rice. Cook for another 5 minutes.
  6. Remove the skillet from the heat and stir in the Parmesan cheese and parsley. Season with salt and pepper.
  7. Stuff the hollowed-out zucchini halves with the meat mixture and place them in a baking dish.
  8. Bake for 30-35 minutes, or until the zucchinis are tender and the filling is golden on top.
  9. Serve the stuffed zucchinis hot and enjoy!
