Monggo is a traditional Filipino dish made with mung beans, vegetables, and often meat. It's a hearty and nutritious meal that's perfect for any day of the week.

Ingredients

  • 1 cup mung beans
  • 4 cups water
  • 1 tablespoon cooking oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tomato, chopped
  • 1 cup spinach leaves
  • 1 cup squash, cubed
  • 1 cup pork belly, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse the mung beans and place them in a pot with water. Bring to a boil, then reduce heat and simmer for 30 minutes or until the beans are soft.
  2. In a separate pan, heat the cooking oil and sauté the onion, garlic, and tomato until fragrant.
  3. Add the pork belly (if using) and cook until browned.
  4. Add the cooked mung beans, spinach, and squash to the pan. Simmer for another 10 minutes.
  5. Season with salt and pepper to taste.
