Monggo
Monggo is a traditional Filipino dish made with mung beans, vegetables, and often meat. It's a hearty and nutritious meal that's perfect for any day of the week.
Ingredients
- 1 cup mung beans
- 4 cups water
- 1 tablespoon cooking oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tomato, chopped
- 1 cup spinach leaves
- 1 cup squash, cubed
- 1 cup pork belly, sliced (optional)
- Salt and pepper to taste
Instructions
- Rinse the mung beans and place them in a pot with water. Bring to a boil, then reduce heat and simmer for 30 minutes or until the beans are soft.
- In a separate pan, heat the cooking oil and sauté the onion, garlic, and tomato until fragrant.
- Add the pork belly (if using) and cook until browned.
- Add the cooked mung beans, spinach, and squash to the pan. Simmer for another 10 minutes.
- Season with salt and pepper to taste.
