Mongolian BBQ Shrimp Fried Rice (Тахиа)

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 cups cooked rice, chilled
  • 1 cup frozen peas and carrots, thawed
  • 3 eggs, beaten
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together the soy sauce, hoisin sauce, oyster sauce, and sesame oil. Set aside.
  2. Heat 1 tbsp of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove the shrimp from the wok and set aside.
  3. Heat the remaining vegetable oil in the wok. Add the minced garlic and cook for 1 minute.
  4. Push the garlic to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the garlic.
  5. Add the chilled rice to the wok and stir-fry for 2-3 minutes, breaking up any clumps.
  6. Pour the sauce mixture over the rice and stir to combine. Cook for another 2-3 minutes.
  7. Add the thawed peas and carrots, cooked shrimp, and chopped green onions to the wok. Stir-fry for an additional 2-3 minutes.
  8. Season with salt and pepper to taste. Serve hot and enjoy!
