Mongolian BBQ Shrimp Fried Rice (Тахиа)

Ingredients
- 1 lb shrimp, peeled and deveined
- 3 cups cooked rice, chilled
- 1 cup frozen peas and carrots, thawed
- 3 eggs, beaten
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 green onions, chopped
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together the soy sauce, hoisin sauce, oyster sauce, and sesame oil. Set aside.
- Heat 1 tbsp of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove the shrimp from the wok and set aside.
- Heat the remaining vegetable oil in the wok. Add the minced garlic and cook for 1 minute.
- Push the garlic to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the garlic.
- Add the chilled rice to the wok and stir-fry for 2-3 minutes, breaking up any clumps.
- Pour the sauce mixture over the rice and stir to combine. Cook for another 2-3 minutes.
- Add the thawed peas and carrots, cooked shrimp, and chopped green onions to the wok. Stir-fry for an additional 2-3 minutes.
- Season with salt and pepper to taste. Serve hot and enjoy!
