Mongolian Beef and Asparagus Stir-Fry (Говьтай гурилтай хуушуур)

Ingredients

  • 1 lb beef, thinly sliced
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon cornstarch
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together soy sauce, hoisin sauce, oyster sauce, and cornstarch. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same skillet. Add the garlic and ginger, and stir-fry for 1 minute.
  4. Add the asparagus to the skillet and stir-fry for 3-4 minutes, or until tender-crisp.
  5. Return the beef to the skillet, pour the sauce over the beef and asparagus, and stir-fry for an additional 2 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve hot.
