Mongolian Beef and Zucchini Stir-Fry (Говьтай гурилтай хуушуур)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 zucchinis, sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • Green onions, chopped (for garnish)

Instructions

  1. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and black pepper. Set aside.
  2. Heat the vegetable oil in a large pan or wok over high heat. Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the pan and set aside.
  3. In the same pan, add the garlic and onion. Stir-fry for 2 minutes until fragrant.
  4. Add the zucchini to the pan and stir-fry for an additional 3-4 minutes until tender-crisp.
  5. Return the beef to the pan and pour the sauce over the beef and zucchini. Stir-fry for 1-2 minutes until everything is well coated and heated through.
  6. Transfer the stir-fry to a serving dish and garnish with chopped green onions.
