Mongolian Beef Hot Pot (Buryat: Шөл)

Ingredients

  • 1 pound beef, thinly sliced
  • 4 cups beef broth
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 2 carrots, sliced
  • 8 ounces mushrooms, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger, grated
  • 1 teaspoon red pepper flakes
  • 4 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef and cook until browned.
  2. Add the onion and garlic, and cook until softened.
  3. Pour in the beef broth and bring to a boil.
  4. Add the carrots, mushrooms, soy sauce, brown sugar, ginger, and red pepper flakes. Reduce heat and simmer for 30 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the hot pot in individual bowls, garnished with chopped green onions.
