Ingredients
- 1.5 lbs (700g) chicken breast, cut into cubes
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 potatoes, peeled and diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent.
- Add the chicken cubes to the pot and cook until they are no longer pink on the outside.
- Sprinkle the curry powder over the chicken and stir to coat the chicken evenly.
- Pour in the coconut milk and chicken broth. Add the diced potatoes and season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat and let it cook for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
- Once done, garnish with fresh cilantro and serve hot with steamed rice or naan bread.
