Mongolian Chicken Curry (Мандах хуушуур)

Ingredients

  • 1.5 lbs (700g) chicken breast, cut into cubes
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 potatoes, peeled and diced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent.
  2. Add the chicken cubes to the pot and cook until they are no longer pink on the outside.
  3. Sprinkle the curry powder over the chicken and stir to coat the chicken evenly.
  4. Pour in the coconut milk and chicken broth. Add the diced potatoes and season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce the heat and let it cook for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Once done, garnish with fresh cilantro and serve hot with steamed rice or naan bread.
