Mongolian Fried Rice (Говьтай хуушуур)

Ingredients

  • 2 cups cooked rice
  • 200g beef, thinly sliced
  • 1 onion, diced
  • 1 carrot, julienned
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the beef and cook until browned.
  3. Push the beef to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  4. Add the onion, carrot, bell pepper, and garlic to the skillet. Cook until the vegetables are tender.
  5. Add the cooked rice and soy sauce to the skillet. Stir well to combine all the ingredients.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes, stirring constantly.
  8. Remove from heat and serve hot.
