Ingredients
- 6 cups chicken or vegetable broth
- 200g tofu, cubed
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon chili paste
- 1 tablespoon sugar
- 1/2 cup shiitake mushrooms, sliced
- 1/2 cup bamboo shoots, sliced
- 2 eggs, beaten
- 1/4 cup green onions, chopped
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, bring the broth to a boil.
- Add the tofu, soy sauce, rice vinegar, chili paste, and sugar. Simmer for 10 minutes.
- Stir in the mushrooms and bamboo shoots, and cook for an additional 5 minutes.
- Slowly pour in the beaten eggs while stirring the soup gently.
- Season with salt and pepper, and remove from heat.
- Stir in the green onions and sesame oil before serving.
