Mongolian Hot and Sour Soup (Хөөсөн тахиа)

Ingredients

  • 6 cups chicken or vegetable broth
  • 200g tofu, cubed
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon chili paste
  • 1 tablespoon sugar
  • 1/2 cup shiitake mushrooms, sliced
  • 1/2 cup bamboo shoots, sliced
  • 2 eggs, beaten
  • 1/4 cup green onions, chopped
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the broth to a boil.
  2. Add the tofu, soy sauce, rice vinegar, chili paste, and sugar. Simmer for 10 minutes.
  3. Stir in the mushrooms and bamboo shoots, and cook for an additional 5 minutes.
  4. Slowly pour in the beaten eggs while stirring the soup gently.
  5. Season with salt and pepper, and remove from heat.
  6. Stir in the green onions and sesame oil before serving.
