Ingredients
- 1 lb lamb, cut into cubes
- 1 cup dried lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 4 cups beef or lamb broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb cubes over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Stir in the cumin, paprika, and turmeric, and cook for another minute.
- Add the dried lentils, diced carrots, and potatoes to the pot.
- Pour in the beef or lamb broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the lamb is tender and the lentils are cooked through.
- Season the stew with salt and pepper to taste.
- Serve the stew hot, garnished with fresh cilantro.
