Mongolian Lamb and Mushroom Stew (Шонхорын тууш)

Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, sliced
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 500g mushrooms, sliced
  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  3. Add the onions, garlic, and ginger to the pot and sauté until the onions are translucent.
  4. Return the lamb to the pot and add the mushrooms, beef broth, and soy sauce.
  5. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 2 hours, or until the lamb is tender.
  6. Season with salt and pepper to taste before serving.
