Шонхорын тууш (Mongolian Lamb and Mushroom Stew) is a traditional Mongolian dish that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 1 kg lamb, cut into chunks
- 2 onions, sliced
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 500g mushrooms, sliced
- 4 cups beef broth
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Add the onions, garlic, and ginger to the pot and sauté until the onions are translucent.
- Return the lamb to the pot and add the mushrooms, beef broth, and soy sauce.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste before serving.
