Ingredients
- 1 lb lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups cooked rice, for serving
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the curry powder, cumin, turmeric, and paprika, and cook for 2 minutes to toast the spices.
- Add the diced tomatoes and coconut milk, and bring the mixture to a simmer.
- Add the cubed potatoes to the pot and season with salt and pepper.
- Cover the pot and let the curry simmer for 45-50 minutes, or until the lamb is tender and the potatoes are cooked through.
- Serve the curry over cooked rice and enjoy!
