Mongolian Lamb Curry (Шонхорын карри)

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 2 potatoes, peeled and cubed
  • 1 cup coconut milk
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  3. Add the lamb cubes to the pot and brown on all sides.
  4. Stir in the curry powder, cumin, turmeric, and paprika, and cook for 2 minutes to toast the spices.
  5. Add the diced tomatoes and coconut milk, and bring the mixture to a simmer.
  6. Add the cubed potatoes to the pot and season with salt and pepper.
  7. Cover the pot and let the curry simmer for 45-50 minutes, or until the lamb is tender and the potatoes are cooked through.
  8. Serve the curry over cooked rice and enjoy!
