Mongolian Lamb Curry (Buryat: Шуулай)
Buryat cuisine, originating from the Buryatia region of Russia, is known for its hearty and flavorful dishes. One such dish is the traditional Buryat Шуулай, a savory Mongolian lamb curry that is sure to warm you up on a cold day.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 2 cups beef broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions and garlic, and cook until softened.
- Add the lamb cubes and brown on all sides.
- Stir in the cumin, paprika, turmeric, and cinnamon.
- Pour in the beef broth and bring to a simmer.
- Add the carrots and potatoes, then season with salt and pepper.
- Cover and simmer for 1 hour, or until the lamb is tender.
- Serve the Шуулай hot, accompanied by steamed rice or crusty bread.
