Mongolian Lamb Curry (Buryat: Шуулай)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 2 cups beef broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Add the lamb cubes and brown on all sides.
  4. Stir in the cumin, paprika, turmeric, and cinnamon.
  5. Pour in the beef broth and bring to a simmer.
  6. Add the carrots and potatoes, then season with salt and pepper.
  7. Cover and simmer for 1 hour, or until the lamb is tender.
  8. Serve the Шуулай hot, accompanied by steamed rice or crusty bread.
