Mongolian Lamb Curry Puffs (Buryat: Шуулай)
Buryat cuisine is a unique blend of Mongolian and Russian influences, resulting in flavorful and hearty dishes. One popular Buryat dish is the "Шуулай" or Mongolian Lamb Curry Puffs, which are savory pastry pockets filled with tender lamb and aromatic spices.
Ingredients
- 500g lamb, minced
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp cumin
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 sheets puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a pan, cook the minced lamb until browned. Add the onions and garlic, and cook until softened.
- Stir in the curry powder, cumin, turmeric, salt, and pepper. Cook for another 5 minutes, then remove from heat and let it cool.
- Preheat the oven to 200°C (400°F). Roll out the puff pastry and cut into 6 squares.
- Place a spoonful of the lamb mixture onto each pastry square. Fold the pastry over to form a triangle, and press the edges to seal.
- Brush the curry puffs with the beaten egg, then place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the pastry is golden brown and crispy.
