Ingredients
- 1 lb lamb, thinly sliced
- 3 cups cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the sliced lamb and cook until browned, then remove from the skillet and set aside.
- In the same skillet, add the remaining vegetable oil and sauté the onion, garlic, and carrot until softened.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the cooked rice, frozen peas, and soy sauce to the skillet. Stir-fry for a few minutes until everything is heated through.
- Return the cooked lamb to the skillet and stir to combine with the rice and vegetables.
- Season with salt and pepper to taste.
- Remove from heat and serve the Mongolian lamb fried rice hot.
