Mongolian Lamb Fried Rice (Шонхорын хуушуур)

Ingredients

  • 1 lb lamb, thinly sliced
  • 3 cups cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the sliced lamb and cook until browned, then remove from the skillet and set aside.
  3. In the same skillet, add the remaining vegetable oil and sauté the onion, garlic, and carrot until softened.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Add the cooked rice, frozen peas, and soy sauce to the skillet. Stir-fry for a few minutes until everything is heated through.
  6. Return the cooked lamb to the skillet and stir to combine with the rice and vegetables.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve the Mongolian lamb fried rice hot.
