Mongolian Lamb Gyro (Buryat: Шуулай)

Ingredients

  • 1 lb lamb, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 cup plain yogurt
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 4 flatbreads
  • 1 tomato, diced
  • 1 cucumber, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Tzatziki sauce for serving

Instructions

  1. In a bowl, combine the lamb, onion, garlic, cumin, paprika, cayenne pepper, yogurt, lemon juice, salt, and pepper. Mix well to ensure the lamb is evenly coated. Marinate for at least 1 hour.
  2. Heat a skillet over medium-high heat. Add the marinated lamb and cook for 5-7 minutes, or until the lamb is cooked through and slightly charred.
  3. Warm the flatbreads in the skillet for 1-2 minutes on each side.
  4. Assemble the gyros by placing a portion of the cooked lamb, diced tomato, sliced cucumber, and chopped cilantro on each flatbread. Drizzle with tzatziki sauce.
  5. Roll up the flatbreads and serve the Buryat Шуулай immediately.
