Mongolian Rice Pilaf (Говьтай тууш)
Говьтай тууш, or Mongolian Rice Pilaf, is a traditional dish from Mongolian cuisine that is both flavorful and satisfying. This hearty pilaf is made with tender lamb, fragrant rice, and a blend of aromatic spices, creating a delicious one-pot meal.
Ingredients
- 1 lb lamb, cut into small pieces
- 2 cups long-grain rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb and cook until browned.
- Add the chopped onion and garlic to the pot, and sauté until fragrant.
- Stir in the diced carrots, cumin, paprika, and turmeric, and cook for a few minutes.
- Add the rice to the pot and stir to combine with the other ingredients.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork before serving.
