Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/4 cup cornstarch
- 3 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 cup low-sodium soy sauce
- 1/2 cup water
- 1/3 cup brown sugar
- 1/4 teaspoon red pepper flakes
- 2 green onions, sliced
Instructions
- In a large bowl, toss the shrimp with cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until golden and crispy, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, heat the remaining tablespoon of vegetable oil. Add the garlic and ginger, and cook for 1 minute until fragrant.
- Stir in the soy sauce, water, brown sugar, and red pepper flakes. Bring the sauce to a simmer and cook for 2-3 minutes until slightly thickened.
- Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until the shrimp is heated through and the sauce is thick and glossy.
- Sprinkle with sliced green onions and serve hot over steamed rice.
