Ingredients
- 2 potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 1 bell pepper, diced
- 1 cup green beans, trimmed
- 1 cup cauliflower florets
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 can (14 oz) coconut milk
- Salt and pepper to taste

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the garlic, ginger, and onion. Sauté until the onion is translucent.
