Monster Energy Balls

Ingredients

  • 1 cup rolled oats
  • 1/2 cup nut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips
  • 1/4 cup shredded coconut
  • 1/4 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl, mix together the rolled oats, nut butter, honey or maple syrup, mini chocolate chips, shredded coconut, chia seeds, vanilla extract, cinnamon, and salt until well combined.
  2. Using your hands, roll the mixture into 12 evenly sized balls.
  3. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
  4. Once set, transfer the energy balls to an airtight container and store in the refrigerator for up to 2 weeks.
