Ingredients

  • 2 cups mashed potatoes
  • 1 cup cooked ground beef
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 1/4 cup relish

Instructions

  1. In a large skillet, cook the ground beef, onions, and bell peppers until the beef is browned and the vegetables are tender.
  2. Spread the mashed potatoes in the bottom of a greased 9x13 inch baking dish.
  3. Sprinkle half of the shredded cheddar cheese over the mashed potatoes.
  4. Spoon the cooked ground beef mixture over the cheese layer.
  5. In a small bowl, mix together the sour cream and green onions, then spread this mixture over the ground beef layer.
  6. Top with the remaining shredded cheddar cheese.
  7. Bake in a preheated 350°F oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes.
  9. Drizzle ketchup, mustard, and relish over the top to create a "monster face" design.
