Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 6 slices thick-cut bacon, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups red wine (such as Burgundy)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish

Instructions

  1. In a large Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Season the beef cubes with salt and pepper, then brown them in the bacon fat over medium-high heat. Remove the beef and set aside.
  3. Add the chopped onion and carrots to the pot and cook until they begin to soften, about 5 minutes. Add the minced garlic and cook for an additional minute.
  4. Sprinkle the flour over the vegetables and cook, stirring constantly, for 2 minutes.
  5. Pour in the red wine and beef broth, stirring to loosen any browned bits from the bottom of the pot. Stir in the tomato paste, thyme, and bay leaves. Return the beef and bacon to the pot and bring the mixture to a simmer.
  6. Cover the pot and reduce the heat to low. Let the stew simmer for 2-3 hours, or until the beef is tender.
  7. Before serving, remove the bay leaves and season the stew with salt and pepper to taste. Serve the bœuf bourguignon garnished with chopped fresh parsley.
