Ingredients
- 2 large tomatoes, sliced
- 2 zucchinis, sliced
- 1 eggplant, sliced
- 1 onion, thinly sliced
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 tablespoon herbes de Provence
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange the sliced vegetables in a circular pattern in a baking dish, alternating the tomatoes, zucchinis, and eggplant.
- Scatter the thinly sliced onion and minced garlic over the arranged vegetables.
- Drizzle the olive oil over the vegetables and sprinkle with herbes de Provence, salt, and pepper.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
- Serve the tian hot, garnished with fresh herbs if desired.
