Ingredients

  • 2 large tomatoes, sliced
  • 2 zucchinis, sliced
  • 1 eggplant, sliced
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 tablespoon herbes de Provence
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Arrange the sliced vegetables in a circular pattern in a baking dish, alternating the tomatoes, zucchinis, and eggplant.
  3. Scatter the thinly sliced onion and minced garlic over the arranged vegetables.
  4. Drizzle the olive oil over the vegetables and sprinkle with herbes de Provence, salt, and pepper.
  5. Cover the baking dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
  7. Serve the tian hot, garnished with fresh herbs if desired.
