Montenegrin Stuffed Tomatoes (Punjene Rajčice)

Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the tomatoes and scoop out the pulp, leaving the shells intact.
  2. In a bowl, mix the cooked rice, chopped onion, minced garlic, chopped parsley, olive oil, salt, and pepper.
  3. Stuff the tomato shells with the rice mixture.
  4. Place the stuffed tomatoes in a deep pan, add a little water, cover, and cook over low heat for 30-40 minutes.
  5. Serve the Punjene Rajčice hot, garnished with additional parsley if desired.
