Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cut the tops off the tomatoes and scoop out the pulp, leaving the shells intact.
- In a bowl, mix the cooked rice, chopped onion, minced garlic, chopped parsley, olive oil, salt, and pepper.
- Stuff the tomato shells with the rice mixture.
- Place the stuffed tomatoes in a deep pan, add a little water, cover, and cook over low heat for 30-40 minutes.
- Serve the Punjene Rajčice hot, garnished with additional parsley if desired.
