Ingredients

  • 2 cups cooked rice
  • 1 cup Montreal smoked meat, diced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add garlic and green onions, and stir-fry for 1-2 minutes until fragrant.
  3. Add diced Montreal smoked meat and cook for 2-3 minutes.
  4. Push the meat to one side of the skillet, pour the beaten eggs onto the other side, and scramble until cooked.
  5. Add frozen peas and carrots, and stir-fry for another 2-3 minutes.
  6. Add cooked rice, soy sauce, and oyster sauce. Stir-fry for 3-4 minutes until everything is well combined.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
