Ingredients
- 1 bunch of callaloo leaves, chopped
- 1 onion, chopped

- 4 cups of vegetable broth
- 1 scotch bonnet pepper, whole
- 1 teaspoon of thyme

Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the bell pepper, tomatoes, and okra, and cook for 5 minutes.
- Stir in the callaloo leaves and cook until wilted.
- Pour in the vegetable broth and add the whole scotch bonnet pepper and thyme.
- Simmer for 20 minutes, then season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving.
