Ingredients

  • 1 bunch of callaloo leaves, chopped

  • 4 cups of vegetable broth
  • 1 scotch bonnet pepper, whole

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the bell pepper, tomatoes, and okra, and cook for 5 minutes.
  3. Stir in the callaloo leaves and cook until wilted.
  4. Pour in the vegetable broth and add the whole scotch bonnet pepper and thyme.
  5. Simmer for 20 minutes, then season with salt and pepper to taste.
  6. Remove the scotch bonnet pepper before serving.
