Ingredients
- 1 lb fresh fish fillets, such as snapper or grouper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 cups fish or vegetable broth
- 1 scotch bonnet pepper, whole (optional for heat)
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Sauté for 5 minutes until softened.
- Add the tomatoes, thyme, paprika, and season with salt and pepper. Cook for another 5 minutes.
- Pour in the coconut milk and fish or vegetable broth. Add the scotch bonnet pepper if using. Bring the stew to a simmer.
- Gently place the fish fillets into the stew. Cover and let it simmer for 15-20 minutes, or until the fish is cooked through.
- Remove the scotch bonnet pepper before serving. Taste and adjust seasoning if needed.
