Montserratian Mango Chutney

Ingredients

  • 4 ripe mangoes, peeled and diced
  • 1 cup white vinegar
  • 1 cup brown sugar
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt

Instructions

  1. In a large saucepan, combine the diced mangoes, white vinegar, brown sugar, chopped onion, minced garlic, grated ginger, mustard seeds, turmeric, red pepper flakes, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the chutney thickens.
  3. Remove the pan from the heat and let the chutney cool to room temperature.
  4. Transfer the mango chutney to sterilized jars and store in the refrigerator. The flavors will continue to develop over time.
