Montserratian Saltfish Fritters
Saltfish fritters are a popular dish in Montserrat, a small island in the Caribbean. These fritters are made with salted cod, locally known as saltfish, and are a delicious and savory snack or appetizer.
Ingredients
- 1 cup salted cod (saltfish), soaked and flaked
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 1 scallion, finely chopped
- 1/2 red bell pepper, finely chopped
- 1/2 hot pepper, finely chopped
- 1/2 teaspoon baking powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup water
- Oil for frying
Instructions
- In a large bowl, combine the flaked saltfish, flour, onion, scallion, red bell pepper, hot pepper, baking powder, black pepper, and paprika.
- Add water gradually to form a thick batter.
- Heat oil in a deep skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve hot and enjoy!
