Montserratian Saltfish Fritters

Ingredients

  • 1 cup salted cod (saltfish), soaked and flaked
  • 1 cup all-purpose flour
  • 1 small onion, finely chopped
  • 1 scallion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1/2 hot pepper, finely chopped
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup water
  • Oil for frying

Instructions

  1. In a large bowl, combine the flaked saltfish, flour, onion, scallion, red bell pepper, hot pepper, baking powder, black pepper, and paprika.
  2. Add water gradually to form a thick batter.
  3. Heat oil in a deep skillet over medium heat.
  4. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  5. Remove the fritters from the oil and drain on paper towels.
  6. Serve hot and enjoy!
