Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 8 Mandarin pancakes
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds

Instructions

  1. In a small bowl, mix the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until no longer pink, about 5-7 minutes.
  3. Add the onion, cabbage, and carrots to the skillet. Cook for an additional 3-4 minutes, until the vegetables are tender-crisp.
  4. Pour the sauce over the chicken and vegetables. Stir to coat everything evenly and cook for 1-2 minutes.
  5. Warm the Mandarin pancakes according to the package instructions.
  6. To serve, spoon the chicken and vegetable mixture onto the center of a pancake. Sprinkle with green onions and sesame seeds, then fold the sides over the filling and roll up.
