Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups fresh blueberries
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch round cake pan.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
  3. Add the cold butter to the flour mixture and use your fingers to rub the butter into the flour until it resembles coarse crumbs.
  4. In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and stir until the dough comes together.
  5. Press two-thirds of the dough into the bottom and up the sides of the prepared cake pan.
  6. Sprinkle the blueberries evenly over the dough in the pan.
  7. Crumble the remaining dough over the blueberries.
  8. Bake for 40-45 minutes, or until the crust is golden brown.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust the top of the cake with powdered sugar before serving.
