Ingredients

  • 2 cups mashed potatoes

  • 1 egg

  • 2 cups fresh blueberries
  • 4 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup bread crumbs
  • 4 tablespoons unsalted butter
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, mix together the mashed potatoes, flour, egg, and salt to form a dough.
  2. In a separate bowl, combine the blueberries, granulated sugar, and cinnamon.
  3. Divide the dough into 8 equal portions and flatten each portion into a disk.
  4. Place a spoonful of the blueberry mixture in the center of each dough disk and seal the edges to form a dumpling.
  5. Bring a large pot of water to a boil and carefully drop the dumplings into the boiling water.
  6. Cook the dumplings for about 10-12 minutes or until they float to the surface.
  7. In a separate pan, melt the butter and add the bread crumbs, toasting them until golden brown.
  8. Remove the dumplings from the water and roll them in the toasted bread crumbs.
  9. Sprinkle the dumplings with powdered sugar before serving.
