Ingredients
- 2 cups mashed potatoes
- 2 cups all-purpose flour
- 1 egg
- Pinch of salt
- 2 cups fresh blueberries
- 4 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup bread crumbs
- 4 tablespoons unsalted butter
- Powdered sugar for dusting
Instructions
- In a large bowl, mix together the mashed potatoes, flour, egg, and salt to form a dough.
- In a separate bowl, combine the blueberries, granulated sugar, and cinnamon.
- Divide the dough into 8 equal portions and flatten each portion into a disk.
- Place a spoonful of the blueberry mixture in the center of each dough disk and seal the edges to form a dumpling.
- Bring a large pot of water to a boil and carefully drop the dumplings into the boiling water.
- Cook the dumplings for about 10-12 minutes or until they float to the surface.
- In a separate pan, melt the butter and add the bread crumbs, toasting them until golden brown.
- Remove the dumplings from the water and roll them in the toasted bread crumbs.
- Sprinkle the dumplings with powdered sugar before serving.
