Moravian Gingerbread Cookies (Moravské perníčky)

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Roll the dough out on a lightly floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
  6. Bake for 10-12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
