Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger, and salt.
- In a separate bowl, cream together the granulated sugar and butter until light and fluffy. Beat in the honey, eggs, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, and mix until just combined.
- Divide the batter evenly among the prepared cake pans and smooth the tops.
- Bake for 12-15 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Place one cake layer on a serving plate and spread a layer of whipped cream on top. Repeat with the remaining layers.
- Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.
