Ingredients

  • 1 cup granulated sugar

  • 1/2 cup honey
  • 2 large eggs

  • 1 cup sour cream
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger, and salt.
  3. In a separate bowl, cream together the granulated sugar and butter until light and fluffy. Beat in the honey, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, and mix until just combined.
  5. Divide the batter evenly among the prepared cake pans and smooth the tops.
  6. Bake for 12-15 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  9. Place one cake layer on a serving plate and spread a layer of whipped cream on top. Repeat with the remaining layers.
  10. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.
