Moravian Plum Dumplings (Moravské švestkové knedlíky)

Ingredients

  • 500g potatoes, peeled and diced
  • 200g all-purpose flour
  • 1 egg
  • Pinch of salt
  • 12 ripe plums, pitted
  • 100g breadcrumbs
  • 50g butter
  • 2 tbsp powdered sugar

Instructions

  1. Boil the potatoes in salted water until tender, then drain and mash them.
  2. In a large bowl, combine the mashed potatoes, flour, egg, and salt to form a dough.
  3. Divide the dough into 12 equal portions and flatten each portion into a disc.
  4. Place a pitted plum in the center of each disc and wrap the dough around it, forming a smooth ball.
  5. Bring a large pot of salted water to a boil and carefully drop the dumplings into the water.
  6. Cook the dumplings for about 10 minutes, or until they float to the surface.
  7. In a separate pan, melt the butter and add the breadcrumbs, toasting them until golden brown.
  8. Remove the dumplings from the water and roll them in the toasted breadcrumbs.
  9. Sprinkle the dumplings with powdered sugar before serving.
