- 1 cup fresh strawberries, hulled and chopped
- 1 cup fresh raspberries
- 1 cup fresh blueberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 1/2 cups coconut cream
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the strawberries, raspberries, blueberries, sugar, and lemon juice. Cook over medium heat for 5 minutes, stirring occasionally, until the berries are soft and the sugar has dissolved. Remove from heat and let cool.
- In a large mixing bowl, beat the coconut cream and vanilla extract until stiff peaks form.
- Gently fold the cooled berry mixture into the coconut cream until fully combined.
- Divide the mousse into serving glasses or bowls and refrigerate for at least 2 hours before serving.
