Mordovian Berry Tart

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2-3 tablespoons ice water
- 4 cups mixed fresh berries (such as strawberries, blueberries, raspberries, and blackberries)
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together.
- Transfer the dough to a floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a large bowl, gently toss together the berries, sugar, cornstarch, lemon juice, and vanilla extract.
- Roll out the chilled dough on a floured surface and transfer it to a tart pan. Trim any excess dough from the edges.
- Spoon the berry mixture into the tart shell.
- Bake for 35-40 minutes, or until the crust is golden and the berries are bubbling.
- Allow the tart to cool before serving.
