Mordovian Buckwheat And Lentil Salad
This Mordovian Buckwheat and Lentil Salad is a nutritious and flavorful dish that is perfect for a light lunch or as a side dish for dinner.
Ingredients
- 1 cup buckwheat
- 1/2 cup green lentils
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the buckwheat and lentils under cold water.
- Cook the buckwheat and lentils in separate pots according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked buckwheat, lentils, cucumber, red bell pepper, parsley, and dill.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour over the salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
