Mordovian Buckwheat And Lentil Salad

Ingredients

  • 1 cup buckwheat
  • 1/2 cup green lentils
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the buckwheat and lentils under cold water.
  2. Cook the buckwheat and lentils in separate pots according to package instructions. Drain and let cool.
  3. In a large bowl, combine the cooked buckwheat, lentils, cucumber, red bell pepper, parsley, and dill.
  4. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour over the salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.
