Ingredients
- 1 large head of cabbage
- 1 cup uncooked rice

- 2 cups mushrooms, sliced

Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage, then blanch them in the boiling water for 2-3 minutes until they are pliable. Remove and set aside to cool.
- Cook the rice according to package instructions and set aside.
- In a large bowl, mix the cooked rice, ground meat, chopped onion, garlic, paprika, black pepper, and salt until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go. Place the cabbage rolls seam side down in a large pot.
- In a separate pan, sauté the mushrooms until they are golden brown. Pour in the broth and bring to a simmer.
- Pour the mushroom sauce over the cabbage rolls in the pot. Cover and simmer for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
- If using, stir in the sour cream just before serving. Garnish with fresh parsley.
