Mordovian Cherry Vareniki

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • Pinch of salt
  • 2 cups pitted cherries
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix the flour and salt. Gradually add the warm water and knead the dough until smooth. Cover and let it rest for 15 minutes.
  2. Meanwhile, in a separate bowl, mix the pitted cherries, sugar, and vanilla extract to make the filling.
  3. Roll out the dough on a floured surface and cut it into circles using a round cutter or a glass.
  4. Place a spoonful of the cherry filling in the center of each circle, then fold the dough over and seal the edges.
  5. Boil the vareniki in a pot of salted water for 3-4 minutes, or until they float to the surface.
  6. Remove the vareniki with a slotted spoon and serve hot, optionally with a sprinkle of sugar or a dollop of sour cream.
