Mordovian Chicken Liver Pâté

Ingredients

  • 500g chicken livers
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 100g butter
  • 2 tbsp brandy
  • 1/4 tsp ground allspice
  • Salt and pepper to taste

Instructions

  1. In a skillet, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the chicken livers to the skillet and cook until browned on the outside but still pink on the inside.
  4. Transfer the mixture to a food processor, add the brandy and allspice, and process until smooth.
  5. Season with salt and pepper to taste, then transfer the pâté to a serving dish.
  6. Cover and refrigerate for at least 2 hours before serving.
