Mordovian Mushroom Piroshki

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup sour cream
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cups mushrooms, finely chopped
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in the sour cream until the dough starts to come together. Turn the dough out onto a floured surface and knead gently until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent. Add the mushrooms and cook until they release their liquid and become golden brown. Season with salt and pepper. Remove from heat and let cool.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Using a round cutter, cut out circles of dough.
- Place a spoonful of the mushroom filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
- Place the piroshki on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
