Māori Hangi Fusion (Hangi Whakatā)
Hangi Whakatā is a fusion dish that combines traditional Māori hangi cooking with modern flavors and ingredients. This unique recipe brings together the rich cultural heritage of New Zealand with a contemporary twist, resulting in a delicious and memorable culinary experience.
Ingredients
- 1.5 kg lamb shoulder, cubed
- 1.5 kg chicken thighs
- 1 kg kumara (sweet potato), peeled and cubed
- 1 kg pumpkin, peeled and cubed
- 2 cups frozen peas
- 2 cups chicken stock
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the hangi pit by digging a hole and heating stones.
- Season the lamb and chicken with salt and pepper.
- Layer the meat, kumara, pumpkin, peas, onions, and garlic in a large foil-lined basket.
- Pour the chicken stock and olive oil over the ingredients.
- Cover the basket with foil and place it in the hangi pit.
- Cover the pit with more foil and a damp cloth, then bury it with soil.
- Cook the hangi for 4 hours, then carefully uncover and remove the basket.
- Transfer the hangi ingredients to a serving platter and enjoy!
