Māori Hangi-inspired Beef Stir-Fry (Kōpī Whakarite)

Ingredients

  • 500g beef sirloin, thinly sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/2 cup beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add beef and stir-fry for 2-3 minutes until browned. Remove beef from the wok and set aside.
  3. Add onion and garlic to the wok and stir-fry for 1-2 minutes. Add mixed vegetables and continue stir-frying for another 3-4 minutes.
  4. Return the beef to the wok, pour in the beef broth, and add the sauce mixture. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the beef and vegetables.
  5. Season with salt and pepper to taste. Serve hot.
